Fermentation |
The harvest takes place in the second week of
October. The grapes are fermented in stainless steel vats with maceration on the skins for 15
days. When malolactic fermentation is complete the wine is placed in mainly new French oak barriques for at least 18
months. Lastly it is aged in bottles for at least 6
months. |
